Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Add the chickpeas, cherry tomatoes, cucumber, red onion, feta, and olives to a large bowl.
  2. Whisk olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Serve the salad right away or let it chill for a short time to blend the flavors.
