Ingredients

  • 24 graham cracker squares, crushed into crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 large apples, peeled, cored, and chopped
  • 1 tablespoon lemon juice
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed
  • 1/3 cup old-fashioned rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, mix the graham cracker crumbs and 1/4 cup granulated sugar. Stir in the melted butter until well combined.
  3. Press a heaping tablespoon of the graham cracker mixture into the bottom of each lined muffin cup, pressing firmly.
  4. In a large bowl, beat the cream cheese and 1/2 cup granulated sugar together until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  6. Evenly distribute the cheesecake batter over the crusts in the muffin cups.
  7. Toss the chopped apples with lemon juice in a bowl and set aside.
  8. In another bowl, combine flour, brown sugar, and cinnamon.
  9. Cut in the cold cubed butter using a pastry blender or two forks until crumbly.
  10. Stir in the oats.
  11. Add the chopped apple mixture over the cheesecake batter in the muffin cups.
  12. Sprinkle the crumble mixture over the apples in each cup.
  13. Bake in the preheated oven for 25-30 minutes, or until the cheesecake filling is set.
  14. Allow the cheesecakes to cool completely in the pan before transferring them to the refrigerator. Chill for at least 2 hours before serving.

Notes

For a gluten-free option, use gluten-free graham crackers. You can also substitute regular sugar for coconut sugar for different sweetness.
