A comforting and creamy Bacon Cheddar Gnocchi Soup perfect for chilly evenings.
Ingredients

- 8–10 slices Bacon
- 1 Tablespoon Butter or Olive Oil
- 1 large Onion (diced)
- 2 large Carrots (peeled and sliced)
- 4 cups Chicken Broth
- 1–2 teaspoons Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic Powder (or 4 cloves minced garlic)
- 1/4 teaspoon Dried Thyme
- 1/2–1 teaspoon Red Chili Flakes
- 16 ounces Gnocchi
- 2 cups Heavy Cream or Half-n-Half
- 2 cups Cheddar Cheese (grated)
Instructions
- Cook bacon in a large pot until crispy. Remove and set aside, keeping the drippings.
- Add butter or olive oil to the pot. Heat it over medium heat.
- Sauté diced onion until it is soft.
- Stir in sliced carrots and cook for a few more minutes.
- Pour in the chicken broth and bring to a boil.
- Season with salt, pepper, garlic powder, thyme, and chili flakes.
- Add gnocchi and cook until they float, about 2-3 minutes.
- Stir in heavy cream and grated cheese until melted and smooth.
- Crumble the cooked bacon into the soup.
- Serve hot and enjoy!
Notes
For a lighter version, use turkey bacon and a lighter milk or plant-based alternative. Adding spinach or kale can boost nutrition without changing flavor.
