Description

A comforting and creamy Bacon Cheddar Gnocchi Soup perfect for chilly evenings.


Ingredients

  • 810 slices Bacon
  • 1 Tablespoon Butter or Olive Oil
  • 1 large Onion (diced)
  • 2 large Carrots (peeled and sliced)
  • 4 cups Chicken Broth
  • 12 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder (or 4 cloves minced garlic)
  • 1/4 teaspoon Dried Thyme
  • 1/21 teaspoon Red Chili Flakes
  • 16 ounces Gnocchi
  • 2 cups Heavy Cream or Half-n-Half
  • 2 cups Cheddar Cheese (grated)

Instructions

  1. Cook bacon in a large pot until crispy. Remove and set aside, keeping the drippings.
  2. Add butter or olive oil to the pot. Heat it over medium heat.
  3. Sauté diced onion until it is soft.
  4. Stir in sliced carrots and cook for a few more minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Season with salt, pepper, garlic powder, thyme, and chili flakes.
  7. Add gnocchi and cook until they float, about 2-3 minutes.
  8. Stir in heavy cream and grated cheese until melted and smooth.
  9. Crumble the cooked bacon into the soup.
  10. Serve hot and enjoy!

Notes

For a lighter version, use turkey bacon and a lighter milk or plant-based alternative. Adding spinach or kale can boost nutrition without changing flavor.
