Ingredients

- 1 pound Chicken Breast
- 2 cups Mixed Vegetables
- 2 cups Rice
- 1/2 cup Mayonnaise
- 1/4 cup Sweet Chili Sauce
- 2 tablespoons Sriracha
Instructions
- Pat the chicken dry and cut into bite-size pieces.
- Cook the rice according to package directions and keep warm.
- Heat oil in a skillet over medium-high heat.
- Sear the chicken until golden and cooked through.
- Remove chicken and cook the mixed vegetables until crisp-tender.
- Whisk mayo, sweet chili sauce, and sriracha in a bowl to make the bang bang sauce.
- Toss the chicken in most of the sauce, saving a bit for drizzling.
- Assemble bowls with rice, vegetables, and sauced chicken.
- Drizzle the rest of the sauce and add a squeeze of lime or chopped green onion.
Notes
Swap half the mayo for Greek yogurt for a lighter version. Pairs well with green salad or cucumber slaw.
