Description

A quick and tasty dinner featuring layers of rice, crisp vegetables, and spicy creamy chicken.


Ingredients

  • 1 pound Chicken Breast
  • 2 cups Mixed Vegetables
  • 2 cups Rice
  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet Chili Sauce
  • 2 tablespoons Sriracha

Instructions

  1. Pat the chicken dry and cut into bite-size pieces.
  2. Cook the rice according to package directions and keep warm.
  3. Heat oil in a skillet over medium-high heat.
  4. Sear the chicken until golden and cooked through.
  5. Remove chicken and cook the mixed vegetables until crisp-tender.
  6. Whisk mayo, sweet chili sauce, and sriracha in a bowl to make the bang bang sauce.
  7. Toss the chicken in most of the sauce, saving a bit for drizzling.
  8. Assemble bowls with rice, vegetables, and sauced chicken.
  9. Drizzle the rest of the sauce and add a squeeze of lime or chopped green onion.

Notes

Swap half the mayo for Greek yogurt for a lighter version. Pairs well with green salad or cucumber slaw.
