Description

- 1 cup cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 tablespoons cooking oil
- 3 tablespoons Bang Bang sauce
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions
- Heat the cooking oil in a large pan over medium heat.
- Add the mixed vegetables and sauté until tender.
- Push the veggies to one side of the pan and pour the beaten eggs on the other side.
- Scramble the eggs until fully cooked.
- Add the cooked chicken and cooked rice to the pan and mix.
- Pour the Bang Bang sauce over the mixture and stir well.
- Season with salt and pepper to taste.
- Cook for 2 to 3 minutes until heated through.
- Garnish with chopped green onions and serve hot.
Notes
Use day-old rice for better texture. Adjust the Bang Bang sauce to taste, especially if you’re looking for milder flavors.
