Description
A soft, gentle jello recipe that is protein-rich and low in sugar, perfect for those on a bariatric diet.
Ingredients

- 1 cup water, divided (half cold, half hot)
- 1 tablespoon unflavored gelatin
- 1/8 teaspoon Himalayan pink salt
- 1 scoop collagen (optional)
- 1 tablespoon lemon juice (optional)
- Sweetener to taste (stevia or monk fruit)
Instructions
- <strong Bloom the gelatin in the cold half of the water.
- Heat the other half of the water until hot but not boiling.
- Pour the hot water over the bloomed gelatin and whisk until dissolved.
- Add the pink salt and stir to blend.
- Add collagen powder if using and whisk until smooth.
- Add lemon juice and sweetener to taste and mix.
- Pour into molds or a dish and let cool to room temperature.
- Chill in the fridge until fully set, at least two hours.
- Unmold gently and serve chilled.
Notes
Store leftovers in an airtight container in the fridge for up to four days. Do not freeze as it can change the texture.
