Description

A soft, gentle jello recipe that is protein-rich and low in sugar, perfect for those on a bariatric diet.


Ingredients

Scale
  • 1 cup water, divided (half cold, half hot)
  • 1 tablespoon unflavored gelatin
  • 1/8 teaspoon Himalayan pink salt
  • 1 scoop collagen (optional)
  • 1 tablespoon lemon juice (optional)
  • Sweetener to taste (stevia or monk fruit)

Instructions

  1. <strong Bloom the gelatin in the cold half of the water.
  2. Heat the other half of the water until hot but not boiling.
  3. Pour the hot water over the bloomed gelatin and whisk until dissolved.
  4. Add the pink salt and stir to blend.
  5. Add collagen powder if using and whisk until smooth.
  6. Add lemon juice and sweetener to taste and mix.
  7. Pour into molds or a dish and let cool to room temperature.
  8. Chill in the fridge until fully set, at least two hours.
  9. Unmold gently and serve chilled.

Notes

Store leftovers in an airtight container in the fridge for up to four days. Do not freeze as it can change the texture.
