A fast and colorful tortellini salad that’s perfect for lunch, picnics, or potlucks.
Ingredients

- 12 ounces tortellini (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella balls
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions, then drain and rinse under cold water.
- Place the cooled tortellini in a large bowl.
- Add the cherry tomatoes, cucumber, red onion, black olives, mozzarella balls, and basil.
- Whisk the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss gently to coat.
- Chill the salad for at least 30 minutes so the flavors meld.
- Taste and add more salt or pepper if needed.
Notes
Try adding grilled chicken or white beans for more protein. Store in an airtight container in the fridge for up to 3 days.
