Ingredients

- 1 cup cake flour
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 12 large egg whites
- 1 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup key lime juice
- Zest of 2 key limes
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Sift the cake flour with half of the sugar and the salt.
- Beat the egg whites and cream of tartar until soft peaks form.
- Add the remaining sugar slowly while you beat to make stiff peaks.
- Fold in the flour mix in small batches until just combined.
- Add the vanilla and almond extracts and fold gently.
- Fold in the key lime juice and the lime zest until blended.
- Pour the batter into an ungreased angel food cake pan.
- Smooth the top with a spatula so it is even.
- Bake for 35 to 40 minutes until the top is light gold and springs back.
- Remove from the oven and invert the pan to cool fully.
- When cool, run a thin knife around the pan and lift the cake out gently.
- Serve with whipped cream and extra lime zest if you like.
Notes
For a healthier twist, consider using organic egg whites and substituting some sugar with a natural sweetener. Adding Greek yogurt to the whipped cream adds protein and a tangy note.
