Ingredients

  • 1 cup cake flour
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 12 large egg whites
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup key lime juice
  • Zest of 2 key limes

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Sift the cake flour with half of the sugar and the salt.
  3. Beat the egg whites and cream of tartar until soft peaks form.
  4. Add the remaining sugar slowly while you beat to make stiff peaks.
  5. Fold in the flour mix in small batches until just combined.
  6. Add the vanilla and almond extracts and fold gently.
  7. Fold in the key lime juice and the lime zest until blended.
  8. Pour the batter into an ungreased angel food cake pan.
  9. Smooth the top with a spatula so it is even.
  10. Bake for 35 to 40 minutes until the top is light gold and springs back.
  11. Remove from the oven and invert the pan to cool fully.
  12. When cool, run a thin knife around the pan and lift the cake out gently.
  13. Serve with whipped cream and extra lime zest if you like.
