Ingredients

  • 2 lbs beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 4 cloves garlic
  • 1 onion, quartered
  • 2 bay leaves
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup Oaxacan cheese, shredded
  • 1/2 cup fresh cilantro, chopped
  • Limes, for serving
  • Radishes, for garnish

Instructions

  1. In a pot, add beef chuck roast and cover with water.
  2. Add guajillo and ancho chilies, garlic, onion, bay leaves, cumin, oregano, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer until the beef is tender, about 180 minutes.
  4. Once cooked, remove the beef and shred it.
  5. Strain and reserve the broth.
  6. Heat a skillet over medium heat.
  7. Dip corn tortillas in the reserved broth.
  8. Fry them in the skillet until they are warm.
  9. Add shredded beef and Oaxacan cheese to the tortillas.
  10. Fold and fry on both sides until crispy.
  11. Serve with chopped cilantro, lime wedges, and radishes for garnish.

Notes

For a healthier twist, consider using lean beef or mushrooms for a vegan option. Pair with sides like pico de gallo and guacamole.
