- 2 tablespoons olive oil
- 12 oz beef or chicken sausage, sliced into 1/2-inch rounds
- 1 medium onion, finely chopped
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1 cup long-grain rice, rinsed
- 2 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- Salt and black pepper, to taste
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sausage slices and cook until browned, about 4–5 minutes. Remove and set aside.
- In the same skillet, add chopped onion and bell pepper. Cook until softened, then add minced garlic and sauté for another minute.
- Add cumin, smoked paprika, and chili powder. Stir and cook for 30 seconds to toast the spices.
- Add rinsed rice and stir to coat with spices. Pour in chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 15–18 minutes.
- Once rice is tender and liquid is absorbed, stir in black beans and reserved sausage. Cook for 2–3 minutes more until heated through.
- Season with salt and black pepper to taste. Garnish with fresh parsley or cilantro before serving.
Notes
For a lighter version, use turkey or chicken sausage and substitute brown rice for added fiber. Add extra veggies like corn or zucchini for more nutrition.
