Delicious and fresh bites combining blackberries, cucumbers, and mozzarella for a bright snack perfect for summer picnics.


Ingredients

  • 20 wooden skewers
  • 20 fresh mozzarella balls
  • 20 large fresh blackberries
  • 1 medium cucumber, cut into 5 (1-inch) rounds, each quartered
  • 1 tablespoon sherry vinegar
  • 2 teaspoons chopped fresh oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 3 tablespoons olive oil
  • Garnish: fresh oregano leaves

Instructions

  1. Wash the blackberries and dry them gently.
  2. Cut the cucumber into rounds and then quarter each round.
  3. Thread one mozzarella ball, one blackberry, and one cucumber piece onto each skewer.
  4. Cover the skewers and chill until you make the dressing.
  5. Whisk the sherry vinegar, chopped oregano, salt, and pepper in a small bowl.
  6. Slowly pour in the olive oil while you whisk until the dressing looks smooth.
  7. Take the skewers from the fridge just before serving.
  8. Drizzle the vinaigrette over the skewers.
  9. Add a small oregano leaf on top for garnish if you like.

Notes

For a lighter touch, consider using a light olive oil or reduce the oil and add a splash of water or plain yogurt. Pair these bites with simple drinks and mild cheeses.
