Ingredients

- 1 pound shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 8 ounces egg noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup sour cream
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook egg noodles according to package instructions, then drain.
- In a bowl, toss shrimp with Cajun seasoning.
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add mushrooms and cook until tender.
- Push the veggies to the side of the pan.
- Add seasoned shrimp, and cook until shrimp are pink and cooked through.
- Pour in chicken broth and bring to a simmer.
- Stir in sour cream and mix until sauce is creamy and heated through.
- Add cooked noodles to the pan and mix well.
- Season with salt and pepper to taste.
- Garnish with parsley, and serve.

To ensure shrimp are tender, avoid overcooking. Adjust seasoning to taste.
