Description

A simple and delicious tart made with a buttery crust and a fresh blueberry topping, highlighted by a creamy lemon curd.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1 large egg yolk
  • 1/2 cup sugar
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 large eggs
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F.
  2. Mix flour, butter, powdered sugar, and salt until crumbly.
  3. Add the egg yolk and mix until a dough forms.
  4. Press the dough into the bottom and sides of a tart pan.
  5. Bake the crust for 15 to 20 minutes until golden.
  6. Whisk sugar, lemon juice, lemon zest, and eggs in a saucepan over medium heat.
  7. Stir the mixture until it thickens into curd and then cool slightly.
  8. Pour the lemon curd into the baked tart shell.
  9. Chill the tart in the fridge for about one hour.
  10. Top the tart with fresh blueberries before serving.

Notes

Use Greek yogurt in place of half the butter for a healthier version. Serve with a light dusting of powdered sugar and a dollop of yogurt or whipped cream.
