Ingredients

  • 2 cups grated carrots (around 4 medium carrots)
  • 1 cup sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsweetened cocoa powder (for frosting)
  • 1 can sweetened condensed milk (for frosting)
  • 2 tablespoons butter (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Chocolate sprinkles (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan or a rectangular baking dish.
  2. In a blender, combine the grated carrots, sugar, vegetable oil, and eggs. Blend until smooth.
  3. In a large mixing bowl, combine the flour, baking powder, cocoa powder, and salt.
  4. Gradually add the carrot mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  6. Place the cake in the preheated oven. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for about 15 minutes. Then, transfer it to a wire rack to cool completely.
  8. In a saucepan over low heat, combine the sweetened condensed milk, butter, and vanilla extract. Stir until the mixture thickens.
  9. Gradually whisk in the cocoa powder until the frosting is smooth and well combined.
  10. Once the cake has cooled, spread the chocolate frosting evenly on top. For added decoration, sprinkle with chocolate sprinkles if desired.
