A fun twist on regular pizza for breakfast, brunch, or any savory craving, featuring a crust made of crispy hash browns topped with eggs, cheese, and optional sausage or bacon.

- 4 cups frozen shredded hash browns, thawed and squeezed dry
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled breakfast sausage or bacon (optional; use plant-based for vegetarian)
- 1/2 cup diced bell pepper
- 1/4 cup chopped green onions
- 4 large eggs
- 1/4 teaspoon paprika
- Salt and pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C). Lightly grease your skillet or pizza pan.
- In a mixing bowl, combine the thawed and dried hash browns, melted butter, salt, and black pepper.
- Press the hash brown mixture evenly into the prepared pan, forming a crust.
- Bake the crust for 20 to 25 minutes, or until golden brown and crispy.
- Remove the baked crust from the oven. Sprinkle the cheddar cheese over the crust.
- If using, add the crumbled sausage or bacon, then sprinkle the diced bell pepper and chopped green onions.
- Create four shallow wells in the toppings using the back of a spoon.
- Crack one egg into each well. Add paprika, salt, and pepper to taste.
- Bake for an additional 10 to 12 minutes, until the egg whites are set and yolks are cooked to your liking.
- Allow to cool for 3 minutes before slicing and serving warm.
Notes
For a healthier option, try using cauliflower hash browns and plant-based cheese. Serve with fresh fruit or salad.
