Description

A fun twist on regular pizza for breakfast, brunch, or any savory craving, featuring a crust made of crispy hash browns topped with eggs, cheese, and optional sausage or bacon.


Ingredients

  • 4 cups frozen shredded hash browns, thawed and squeezed dry
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage or bacon (optional; use plant-based for vegetarian)
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped green onions
  • 4 large eggs
  • 1/4 teaspoon paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Lightly grease your skillet or pizza pan.
  2. In a mixing bowl, combine the thawed and dried hash browns, melted butter, salt, and black pepper.
  3. Press the hash brown mixture evenly into the prepared pan, forming a crust.
  4. Bake the crust for 20 to 25 minutes, or until golden brown and crispy.
  5. Remove the baked crust from the oven. Sprinkle the cheddar cheese over the crust.
  6. If using, add the crumbled sausage or bacon, then sprinkle the diced bell pepper and chopped green onions.
  7. Create four shallow wells in the toppings using the back of a spoon.
  8. Crack one egg into each well. Add paprika, salt, and pepper to taste.
  9. Bake for an additional 10 to 12 minutes, until the egg whites are set and yolks are cooked to your liking.
  10. Allow to cool for 3 minutes before slicing and serving warm.

Notes

For a healthier option, try using cauliflower hash browns and plant-based cheese. Serve with fresh fruit or salad.
