Description

Delicious bite-sized brownie treats topped with smooth chocolate ganache, perfect for sharing or enjoying as a sweet indulgence.


Ingredients

  • 4 ounces semisweet chocolate, chopped
  • ¾ cup unsalted butter (12 tbsp or 165g)
  • ¾ cup granulated sugar (150g)
  • ½ cup light brown sugar (100g)
  • 3 large eggs
  • 1½ teaspoons vanilla extract
  • 1 cup all-purpose flour (140g)
  • ¾ cup cocoa powder (65g)
  • ¾ teaspoon salt
  • 6 ounces semisweet chocolate, chopped or in morsels
  • ¾ cup heavy whipping cream (6 ounces)
  • Fleur de sel, for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a medium saucepan, melt the semisweet chocolate and butter together over low heat, stirring until smooth.
  3. Remove from heat and stir in granulated sugar and light brown sugar until fully combined.
  4. Add eggs one at a time, whisking after each addition. Stir in vanilla extract.
  5. Sift together flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet ingredients until fully combined.
  6. Pour the brownie batter into the prepared pan and smooth the top.
  7. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the brownies to cool completely in the pan.
  9. Once cool, transfer to a cutting board and cut into small squares or rectangles to create petit fours.
  10. In a saucepan, heat the heavy whipping cream over medium heat until it begins to simmer.
  11. Remove from heat and pour over the chopped semisweet chocolate. Let sit for 2–3 minutes to melt.
  12. Stir until smooth and glossy.
  13. Pour the ganache over each petit four, allowing it to coat evenly.
  14. Let any excess drip off and let the ganache set for a few minutes.
  15. Sprinkle fleur de sel lightly over each petit four for a perfect salty-sweet balance.
  16. Allow the ganache to set completely before serving.

Notes

Make sure the brownies are completely cooled before cutting for neat squares. For a glossy ganache, finely chop the chocolate before adding the hot cream.
