Description

Ingredients

  • 4 boneless, skinless chicken breasts, cut into large chunks
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning (or a mix of basil, oregano, and thyme)
  • Salt & black pepper, to taste
  • 2 cups cherry tomatoes (or diced Roma tomatoes)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup fresh basil leaves, chopped
  • 1 tbsp balsamic glaze (optional, for drizzling)

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Season chicken with olive oil, garlic, Italian seasoning, salt, and pepper.
  3. Heat a skillet over medium-high and sear chicken pieces for 2–3 minutes per side until golden.
  4. Transfer seared chicken to a baking dish.
  5. Top with diced tomatoes, mozzarella, and Parmesan cheese.
  6. Place in the oven and bake for 20–25 minutes, until chicken is fully cooked and cheese is melted and bubbly.
  7. Remove from oven and sprinkle with fresh basil.
  8. Drizzle with balsamic glaze if desired.
  9. Serve hot with pasta, rice, or crusty bread.

Notes

Check doneness with a thermometer; chicken should read 75°C (165°F). Let the dish rest five minutes before serving.
