Ingredients

  • 2 tablespoons olive oil
  • 12 oz fully cooked chicken or turkey sausage, sliced
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 cups butternut squash purée (canned or homemade)
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh)
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 1 lb potato gnocchi (shelf-stable or refrigerated)
  • Fresh thyme leaves
  • Extra Parmesan

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, 3–4 minutes. Transfer to a plate.
  2. Add butter and onion to the skillet. Cook 3 minutes until softened, then add garlic and cook 30 seconds more.
  3. Whisk in butternut squash purée, chicken broth, cream, thyme, and red pepper flakes. Simmer 5–7 minutes until smooth and slightly thickened. Season with salt and pepper.
  4. Meanwhile, bring a pot of salted water to a boil. Cook gnocchi until they float, about 2–3 minutes. Reserve 1/4 cup cooking water, then drain.
  5. Add gnocchi and sausage to the skillet with sauce. Toss gently, adding reserved gnocchi water if needed to loosen the sauce.
  6. Stir in Parmesan cheese and serve hot, garnished with extra Parmesan and fresh thyme.

Notes

Gnocchi cook very quickly—remove them as soon as they float to avoid mushiness. Save some gnocchi water to create a silky sauce. Taste and adjust seasoning before serving.
