Ingredients

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for coating
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.
- Stir in the vanilla extract.
- Mix in the flour, chopped pecans, and salt until just combined.
- Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until lightly golden.
- Remove from the oven and let them cool slightly before rolling them in powdered sugar.
- Allow to cool completely on a wire rack before serving.
Notes
These cookies can be made with different nuts or enhanced with chocolate chips or cinnamon for extra flavor.
