Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus extra for coating
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.
  3. Stir in the vanilla extract.
  4. Mix in the flour, chopped pecans, and salt until just combined.
  5. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until lightly golden.
  7. Remove from the oven and let them cool slightly before rolling them in powdered sugar.
  8. Allow to cool completely on a wire rack before serving.

Notes

These cookies can be made with different nuts or enhanced with chocolate chips or cinnamon for extra flavor.
