- 8 oz penne pasta
- 1 lb chicken breast, sliced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving
- Chopped parsley for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat.
- Season the chicken slices with Cajun seasoning, then add to the skillet, cooking until browned and cooked through. Remove chicken and set aside.
- In the same skillet, add bell pepper, onion, and garlic, sautéing until soft.
- Pour in chicken broth and heavy cream, stirring to combine and allow to simmer for a few minutes.
- Return the chicken to the skillet and stir in the cooked pasta. Mix until well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese and chopped parsley.
Notes
For a healthier option, use whole grain pasta and light cream. Add vegetables like spinach or zucchini for extra nutrition.
