Description

A sweet and savory comfort meal featuring chicken thighs simmered in a rich garlic ginger broth served over rice.


Ingredients

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups chicken broth
  • 1 cup rice
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • 2 tablespoons brown sugar
  • 1/2 teaspoon pepper

Instructions

  1. Mix soy sauce, minced garlic, grated ginger, and brown sugar in a bowl.
  2. Add the chicken thighs and let them marinate for at least 30 minutes.
  3. Heat sesame oil in a pot over medium heat.
  4. Remove chicken from the marinade and sear both sides until golden.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer until chicken is cooked through, about 20 to 25 minutes.
  7. Cook rice separately according to package directions.
  8. Serve the caramelised chicken over rice and top with sliced green onions and a pinch of pepper.

Notes

Marinate at least 30 minutes for good flavor. Sear well to build color before simmering. Taste the broth near the end and adjust sweetness or saltiness as desired.
