- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon garlic powder
- 3/4 teaspoon kosher salt
- 1/4 teaspoon cayenne (optional)
- 1/2 cup cold unsalted butter, grated or cubed
- 1 1/2 cups sharp cheddar, shredded
- 3/4–1 cup cold buttermilk
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon garlic powder
- 1 tablespoon chopped parsley
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish.
- In a large skillet, melt butter and oil. Sauté onion, carrots, and celery for 4–5 minutes until softened. Add garlic and cook 30 seconds.
- Sprinkle flour over vegetables and stir 1 minute. Gradually whisk in chicken broth and milk until smooth. Add thyme, paprika, salt, and pepper. Simmer 3–4 minutes until thickened.
- Stir in chicken, peas, parsley, and lemon juice if using. Transfer filling to baking dish.
- In a bowl, whisk flour, baking powder, baking soda, garlic powder, salt, and cayenne. Cut in butter until crumbly. Fold in cheddar and buttermilk until soft dough forms.
- Pat dough to 3/4-inch thickness. Cut 8–10 biscuits or spoon over filling. Arrange on top, leaving gaps for steam.
- Bake 20–25 minutes until biscuits are golden and filling is bubbling.
- Mix melted butter, garlic powder, and parsley. Brush over hot biscuits. Let rest 10 minutes before serving.
Notes
Use very cold butter for flaky biscuits and avoid overmixing dough. Let cobbler rest before serving so the sauce thickens.
