- 8 large eggs
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1 cup diced ham or cooked bacon
- 1 small onion, finely chopped
- 1 green bell pepper, chopped
- 1 cup sliced mushrooms
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 tablespoon butter
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with butter or spray.
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion, green pepper, and mushrooms to the skillet.
- Sauté the vegetables until they are soft, about five minutes.
- Whisk together the eggs, milk, salt, pepper, and garlic powder in a large bowl.
- Stir the cooked vegetables into the egg mix.
- Add the ham or cooked bacon and one and a half cups of the shredded cheese.
- Pour the whole mix into the prepared baking dish and smooth the top.
- Sprinkle the remaining half cup of cheese evenly over the dish.
- Bake for 30-35 minutes until the egg is set and the top looks golden.
- Let the bake sit a few minutes before you cut it into squares.
- Serve warm and enjoy with your favorite sides.
Notes
To lower calories, consider using egg whites, low-fat milk, and less cheese. Add veggies like spinach or cherry tomatoes for extra color and nutrition.
