  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F and grease a 9×9 inch pan.
  2. Mix flour, cocoa powder, baking soda, and salt in a bowl.
  3. Whisk sugars, oil, eggs, food coloring, and vanilla in another bowl.
  4. Stir the dry mix into the wet mix until just combined.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 20 to 25 minutes until a toothpick comes out clean.
  7. Cool the brownies completely in the pan on a rack.
  8. Beat cream cheese and butter until smooth for the frosting.
  9. Add powdered sugar and vanilla and beat until creamy.
  10. Spread the frosting over cooled brownies and cut into squares.

Notes

For a lighter version, consider using applesauce for half the oil or adding mashed berries for flavor. Store leftovers in an airtight container in the fridge for up to 4 days.
