- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F and grease a 9×9 inch pan.
- Mix flour, cocoa powder, baking soda, and salt in a bowl.
- Whisk sugars, oil, eggs, food coloring, and vanilla in another bowl.
- Stir the dry mix into the wet mix until just combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 20 to 25 minutes until a toothpick comes out clean.
- Cool the brownies completely in the pan on a rack.
- Beat cream cheese and butter until smooth for the frosting.
- Add powdered sugar and vanilla and beat until creamy.
- Spread the frosting over cooled brownies and cut into squares.
Notes
For a lighter version, consider using applesauce for half the oil or adding mashed berries for flavor. Store leftovers in an airtight container in the fridge for up to 4 days.
