- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon chili powder
- 1 tablespoon brown sugar
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup chicken broth
- 1 tablespoon lime juice
- Chopped cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Mix chili powder, brown sugar, paprika, salt, and pepper in a bowl.
- Rub the spice mix onto the chicken breasts.
- Heat olive oil in a skillet over medium-high heat.
- Sear the chicken 3 to 4 minutes per side until browned.
- Transfer chicken to a baking dish and pour in chicken broth and lime juice.
- Bake 25 to 30 minutes until the chicken reaches 165°F and is cooked through.
- Let the chicken rest a few minutes, then garnish with chopped cilantro before serving.
Notes
Check the thickest part of the breast with a thermometer. Rest the meat five minutes so juices settle. Taste and add more salt or lime if needed.
