Description

These soft, chocolatey cookies topped with creamy vanilla buttercream frosting are perfect for any occasion.


Ingredients

  • 2 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1/8 tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1 cup powdered sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1 cup unsalted butter (room temperature)
  • 4 cups sifted powdered sugar
  • ¼ cup heavy cream
  • 2 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, cocoa powder, baking soda, cream of tartar, and salt.
  3. In another bowl, beat the butter and powdered sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet mixture and combine until smooth.
  6. Roll out the dough on a floured surface to about 1/4 inch thick.
  7. Use cookie cutters to cut out shapes and place them on a baking sheet lined with parchment paper.
  8. Bake for 8-10 minutes until the edges are firm.
  9. Let cookies cool on a cooling rack.
  10. In a separate bowl, beat the second cup of butter until creamy.
  11. Gradually add the sifted powdered sugar, heavy cream, vanilla extract, and salt; mix until smooth and fluffy.
  12. Frost the cooled cookies with the vanilla buttercream.

Notes

Use unsweetened applesauce for a lighter version or whole wheat flour for added nutrition. Store cookies in an airtight container for up to a week.
