Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 8 oz semisweet chocolate (for mousse)
  • 8 oz semisweet chocolate (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F and grease a 9 by 13 inch pan.
  2. Melt the butter in a saucepan and remove from heat.
  3. Stir in the granulated sugar and brown sugar.
  4. Beat in the eggs one at a time.
  5. Stir in the vanilla.
  6. Mix flour, cocoa, and salt in a bowl.
  7. Fold dry mix into the chocolate mix until just blended.
  8. Pour batter into the prepared pan.
  9. Bake for 20 to 25 minutes and let cool.
  10. Melt the semisweet chocolate for the mousse and cool slightly.
  11. Whip the cream until stiff peaks form.
  12. Fold whipped cream into the cooled chocolate gently.
  13. Spread the mousse over the cooled brownies.
  14. Chill the brownies with mousse until it sets.
  15. Heat heavy cream for ganache until it simmers.
  16. Pour the hot cream over the ganache chocolate and let sit.
  17. Stir the ganache until smooth.
  18. Pour ganache over the mousse and chill until set.
  19. Cut into squares and serve.

Notes

For a lighter mousse, consider using Greek yogurt instead of some cream. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to one month.
