Ingredients

  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1/2 cup raspberry puree
  • 1/4 cup powdered sugar
  • Cocoa powder or chocolate sprinkles for coating

Instructions

  1. Heat the heavy cream in a saucepan until it’s just about to boil.
  2. Remove from heat and stir in the chopped chocolate until melted and smooth.
  3. Mix in the raspberry puree and powdered sugar until fully combined.
  4. Refrigerate the mixture for about 120 minutes, or until firm.
  5. Use a small scoop to form balls from the mixture.
  6. Roll the balls in cocoa powder or chocolate sprinkles.
  7. Place the truffles on a parchment-lined tray and refrigerate until ready to serve or package as gifts.

Notes

Make sure the heavy cream is heated just enough to melt the chocolate smoothly. Chill the truffles long enough so they hold their shape when rolling them.
