Description
A cool and easy treat of sweet strawberry and dark chocolate coated yogurt clusters.
Ingredients
Scale
- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- Mix the strawberries, yogurt, honey, and vanilla in a large bowl.
- Scoop about 2 tablespoons of the mix onto a parchment-lined sheet to form clusters.
- Make about 10 clusters.
- Freeze the clusters until they are solid, about 1 to 2 hours.
- Melt the chocolate chips with the coconut oil in a microwave-safe bowl, stirring every 15 to 30 seconds.
- Dip each frozen cluster into the melted chocolate and place back on the sheet.
- Add a small pinch of sea salt if you like.
- Freeze a few minutes more so the chocolate sets and the yogurt firms.
Notes
Use full-strength Greek yogurt and chop strawberries small for best results. Store in a freezer-safe container with parchment paper between layers.
