Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate ganache (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat together butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg and vanilla, mixing well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Scoop tablespoons of dough and roll into balls.
  7. Place on a baking sheet lined with parchment paper.
  8. Make an indent in the center of each cookie using your thumb.
  9. Bake for about 10-12 minutes.
  10. Remove from the oven and fill the centers with chocolate ganache.
  11. Let cool before serving.

Notes

Feel free to swap out the chocolate ganache for fruit preserves or other fillings.
