Description

Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup chopped tomatoes
  • 1 cup diced cucumbers
  • 1/2 cup sliced red onion
  • 1/2 cup black olives, sliced
  • 1/2 cup sliced pepperoncini
  • 1 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Put the romaine, tomatoes, cucumbers, red onion, black olives, pepperoncini, and feta in a large bowl.
  2. Whisk the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad.
  4. Toss the salad well until the dressing coats all the pieces.
  5. Taste and adjust salt and pepper if you need to.
  6. Serve right away and enjoy the fresh crunch.

Notes

For a creamier dressing, swap half the olive oil for plain Greek yogurt. Add cooked chickpeas for extra protein.
