Description

Healthy and quick Cinnamon Apple Cottage Cheese Bites, perfect for a snack or breakfast on the go.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional, for added sweetness)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  2. In a mixing bowl, combine the cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt.
  3. Mix until the batter is well combined.
  4. Let the batter sit for 5 minutes so the oats absorb some moisture.
  5. Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
  6. Bake for 18 to 20 minutes until the bites are set and lightly golden on top.
  7. Cool the bites in the pan for a few minutes.
  8. Transfer the bites to a wire rack to cool completely.
  9. Enjoy warm or store in the fridge for up to 4 days.

Notes

For a twist, add chopped nuts, a splash of vanilla, or serve with yogurt.
