- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together granulated sugar, melted butter, and brown sugar until smooth.
- Add eggs and vanilla extract, mixing until well combined.
- In another bowl, sift together flour, cocoa powder, ground cinnamon, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop tablespoons of dough and roll them into balls, then roll in powdered sugar.
- Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough to help the cookies keep their shape while baking. Roll in powdered sugar again after cooling for a thicker layer.
