Ingredients

  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup milk
  • ½ cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • ¼ cup unsalted butter, melted
  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk

Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch pan.
  2. Beat the soft butter and granulated sugar until light.
  3. Add the eggs and vanilla and mix well.
  4. Whisk the flour, baking powder, and salt in a bowl.
  5. Add dry ingredients to wet, alternating with milk.
  6. Stir until the batter is just combined.
  7. Spread half the batter in the pan.
  8. Mix brown sugar and cinnamon in a small bowl.
  9. Stir in the melted butter until smooth.
  10. Drop spoonfuls of the cinnamon mix over the base batter.
  11. Add the remaining batter on top.
  12. Use a knife to swirl the cinnamon through the batter.
  13. Bake for 25 to 30 minutes until a toothpick comes out clean.
  14. Cool the bars completely on a wire rack.
  15. Beat cream cheese and softened butter until smooth.
  16. Add powdered sugar and vanilla and mix well.
  17. Add milk one tablespoon at a time until spreadable.
  18. Spread frosting on the cooled bars.
  19. Cut into squares and serve.

Notes

For a healthier twist, consider using half whole wheat flour and substituting some butter with applesauce.
