- 1 pound medium Pan-Seared Citrus Shrimp
- 8 cups greens (such as arugula, spinach, lettuce, or spring mix)
- Extra virgin olive oil
- Juice of 1/2 lemon or 1/2 orange
- 1 avocado (sliced or diced)
- 1 shallot (minced)
- 4 ounces sliced almonds (toasted)
- Kosher salt and freshly ground black pepper
Instructions
- Prepare the Pan-Seared Citrus Shrimp or warm any leftover shrimp gently.
- Place the greens in a large bowl.
- Add the shrimp to the greens.
- Drizzle with extra virgin olive oil.
- Squeeze the juice of half a lemon or orange over the salad.
- Toss the salad gently to coat the greens and shrimp.
- Add the sliced or diced avocado.
- Scatter the minced shallot over the salad.
- Sprinkle the toasted sliced almonds on top.
- Season with kosher salt and freshly ground black pepper to taste.
- Toss once more and serve right away.
Notes
To keep the salad fresh, store leftovers separately. Enjoy with a glass of cold white wine or sparkling water.
