- Fresh parsley for garnish
Instructions
- Heat the pot and sauté the onion, carrot, and celery until soft.
- Add the diced potatoes and pour in the broth.
- Bring the pot to a boil.
- Lower the heat and simmer until the potatoes are tender.
- Stir in the sliced sausage and cook a few minutes.
- Pour in the heavy cream and stir to combine.
- Taste and season with salt and pepper.
- Serve hot and top with chopped fresh parsley.
