Description

Ingredients

  • 4 ears of corn
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste
  • Lime wedges for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Place the cleaned ears on the grill.
  3. Grill the corn for about 10 to 15 minutes, turning occasionally.
  4. Watch for char marks and a tender kernel texture.
  5. Mix mayonnaise, sour cream, lime juice, chili powder, and salt in a bowl.
  6. Remove the corn from the grill once it is charred and tender.
  7. Coat each ear with the prepared sauce while the corn is hot.
  8. Sprinkle crumbled cotija cheese over the sauced corn.
  9. Scatter chopped cilantro on top for a fresh note.
  10. Serve with lime wedges on the side.

Notes

For a healthier version, use Greek yogurt instead of sour cream and reduce the mayonnaise. This dish pairs well with grilled chicken, fish, or a fresh green salad.
