A warm and comforting slow cooker meal featuring tender corned beef brisket, cabbage, and hearty vegetables. Perfect for easy dinners.

- 3–4 pounds corned beef brisket (with seasoning packet)
- 1 medium head green cabbage, chopped
- 4 large carrots, peeled and cut into chunks
- 1.5 pounds Yukon Gold or red potatoes, cut into chunks (optional)
- 1 large yellow onion, peeled and quartered
- 3 cloves garlic, smashed
- 4 cups beef broth
- 2 tablespoons apple cider vinegar
- 1–2 tablespoons pickling spices
- Salt and pepper to taste
Instructions
- Peel and chop the carrots and potatoes into large chunks and set them aside.
- Quarter the onion and chop the cabbage into bite-sized pieces and set aside.
- Remove the brisket from its packaging and rinse it under cold water to wash off excess brine.
- Pat the brisket dry with paper towels.
- Place the onion, carrots, and potatoes at the bottom of the slow cooker.
- Lay the corned beef brisket on top of the vegetables fat side up.
- Pour in the beef broth and apple cider vinegar over everything.
- Sprinkle the pickling spices evenly over the brisket and add the smashed garlic cloves.
- Season lightly with salt and pepper but remember the brisket can be salty from the brine.
- Cover the slow cooker and set it to low heat.
- Cook on low for six to eight hours and avoid lifting the lid for the first four hours.
- About thirty minutes before the end of cooking time, nestle the chopped cabbage on top around the brisket.
- Replace the lid and cook until the cabbage is tender but still has shape.
- When done, carefully remove the brisket and let it rest on a cutting board for ten minutes.
- Slice the brisket against the grain into quarter-inch thick pieces and serve with the vegetables and a ladle of cooking liquid.

For lighter options, consider using low-sodium broth and adding extra vegetables.
