Cozy Slow Cooker Corned Beef and Cabbage

Description

A warm and comforting slow cooker meal featuring tender corned beef brisket, cabbage, and hearty vegetables. Perfect for easy dinners.


Ingredients

  • 34 pounds corned beef brisket (with seasoning packet)
  • 1 medium head green cabbage, chopped
  • 4 large carrots, peeled and cut into chunks
  • 1.5 pounds Yukon Gold or red potatoes, cut into chunks (optional)
  • 1 large yellow onion, peeled and quartered
  • 3 cloves garlic, smashed
  • 4 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 12 tablespoons pickling spices
  • Salt and pepper to taste

Instructions

  1. Peel and chop the carrots and potatoes into large chunks and set them aside.
  2. Quarter the onion and chop the cabbage into bite-sized pieces and set aside.
  3. Remove the brisket from its packaging and rinse it under cold water to wash off excess brine.
  4. Pat the brisket dry with paper towels.
  5. Place the onion, carrots, and potatoes at the bottom of the slow cooker.
  6. Lay the corned beef brisket on top of the vegetables fat side up.
  7. Pour in the beef broth and apple cider vinegar over everything.
  8. Sprinkle the pickling spices evenly over the brisket and add the smashed garlic cloves.
  9. Season lightly with salt and pepper but remember the brisket can be salty from the brine.
  10. Cover the slow cooker and set it to low heat.
  11. Cook on low for six to eight hours and avoid lifting the lid for the first four hours.
  12. About thirty minutes before the end of cooking time, nestle the chopped cabbage on top around the brisket.
  13. Replace the lid and cook until the cabbage is tender but still has shape.
  14. When done, carefully remove the brisket and let it rest on a cutting board for ten minutes.
  15. Slice the brisket against the grain into quarter-inch thick pieces and serve with the vegetables and a ladle of cooking liquid.

For lighter options, consider using low-sodium broth and adding extra vegetables.
