Ingredients

  • 2 cups crushed cookie crumbs
  • 1/2 cup melted butter
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix crushed cookie crumbs with melted butter in a medium bowl.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan.
  4. Beat the cream cheese until smooth in a large bowl.
  5. Add sugar and vanilla, and beat until well mixed.
  6. Add eggs one at a time, mixing well after each.
  7. Stir in sour cream until the batter is smooth.
  8. Gently fold in the blueberries.
  9. Pour the filling over the crust in the pan.
  10. Bake for 45 to 50 minutes, until the center is set.
  11. Let the cheesecake cool, then chill for at least four hours before serving.

Consider using low-fat cream cheese and a light cookie for the crust to cut calories. Avoid overmixing to prevent cracks in the top.
