- 2 cups crushed cookie crumbs
- 1/2 cup melted butter
- 2 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 325°F (160°C).
- Mix crushed cookie crumbs with melted butter in a medium bowl.
- Press the crumb mixture into the bottom of a 9-inch springform pan.
- Beat the cream cheese until smooth in a large bowl.
- Add sugar and vanilla, and beat until well mixed.
- Add eggs one at a time, mixing well after each.
- Stir in sour cream until the batter is smooth.
- Gently fold in the blueberries.
- Pour the filling over the crust in the pan.
- Bake for 45 to 50 minutes, until the center is set.
- Let the cheesecake cool, then chill for at least four hours before serving.
Notes
Consider using low-fat cream cheese and a light cookie for the crust to cut calories. Avoid overmixing to prevent cracks in the top.
