- 2 cups shredded cooked chicken
- 1 cup orzo pasta
- 1 cup carrots, diced
- 1 cup peas
- 1 cup celery, diced
- 1/2 cup onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 pie crust (optional, for topping)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and sauté until soft.
- Stir in flour and cook for another minute.
- Slowly pour in chicken broth while stirring to make a smooth base.
- Add orzo, shredded chicken, peas, thyme, and salt and pepper.
- Simmer until the orzo is tender, about 10 minutes.
- Pour in heavy cream and stir until the mix is smooth and warm.
- If using a crust, transfer the filling to a pie dish.
- Cover with the pie crust and press the edge to seal.
- Bake at 375°F (190°C) for 25 to 30 minutes until the crust is golden and the filling bubbles.
- Let the pot pie cool for a few minutes before cutting and serving.
Notes
For a healthier twist, consider using half-and-half instead of heavy cream, or adding more vegetables like spinach or bell pepper.
