Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup orzo pasta
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup celery, diced
  • 1/2 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 pie crust (optional, for topping)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and sauté until soft.
  3. Stir in flour and cook for another minute.
  4. Slowly pour in chicken broth while stirring to make a smooth base.
  5. Add orzo, shredded chicken, peas, thyme, and salt and pepper.
  6. Simmer until the orzo is tender, about 10 minutes.
  7. Pour in heavy cream and stir until the mix is smooth and warm.
  8. If using a crust, transfer the filling to a pie dish.
  9. Cover with the pie crust and press the edge to seal.
  10. Bake at 375°F (190°C) for 25 to 30 minutes until the crust is golden and the filling bubbles.
  11. Let the pot pie cool for a few minutes before cutting and serving.

Notes

For a healthier twist, consider using half-and-half instead of heavy cream, or adding more vegetables like spinach or bell pepper.
