Ingredients

  • 1 pound white fish fillets (cod, halibut, or tilapia)
  • 1 can (14 ounces) coconut milk
  • 2 cups vegetable or chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 medium tomatoes, diced
  • 1 bell pepper, chopped (red or yellow)
  • 1 cup spinach or kale, chopped
  • 12 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon curry powder (or to taste)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges for serving

Instructions

  1. Rinse the fish, pat dry, and cut into bite-sized pieces, then season with salt and pepper.
  2. Heat oil in a large pot over medium heat and sauté the chopped onion until soft.
  3. Add the minced garlic and ginger and cook until fragrant.
  4. Stir in the diced tomatoes and chopped bell pepper and cook until they soften.
  5. Pour in the coconut milk and broth and bring the mix to a gentle simmer.
  6. Add fish sauce, lime juice, and curry powder and taste, then adjust salt and pepper.
  7. Gently add the fish pieces to the pot and cook until the fish turns opaque.
  8. Stir in the chopped spinach or kale and cook until wilted.
  9. Remove from heat and ladle into bowls, garnish with fresh cilantro and serve with lime wedges.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on low heat. Can freeze without greens for up to 2 months.
