Description

This Creamy Herb Chicken & Basmati Rice is a comforting one-pan meal filled with tender chicken, fluffy basmati rice, and a rich, creamy herb sauce that brings the whole family together.


Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup basmati rice, rinsed
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons cream cheese
  • 1 teaspoon dried parsley or 1 tablespoon fresh chopped
  • 1/2 teaspoon onion powder
  • Chopped fresh parsley, for garnish

Instructions

  1. Warm olive oil in a large skillet over medium heat. Add chicken and season with Italian herbs, garlic powder, salt, and pepper. Sauté 6–8 minutes until golden and cooked through. Remove and set aside.
  2. In the same skillet, add rinsed basmati rice and toast for 1–2 minutes to enhance flavor.
  3. Pour in chicken broth and bring to a simmer. Cover, reduce heat to low, and cook 12–14 minutes until rice is tender and liquid absorbed.
  4. Stir in heavy cream, cream cheese, parsley, and onion powder until creamy and smooth.
  5. Return chicken and juices to the skillet. Simmer 2–3 minutes until heated through and sauce thickens.
  6. Garnish with fresh parsley and serve warm.

Notes

For a lighter version, use half-and-half instead of heavy cream. Add peas, spinach, or mushrooms for extra vegetables. Store leftovers up to 3 days in the refrigerator.
