- 1 head cauliflower, cut into florets
- 1 head broccoli, cut into florets
- 2 carrots, sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 2 cups shredded cheese (cheddar or a blend)
- Salt and pepper to taste
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon onion powder (optional)
- 1/2 cup breadcrumbs (for topping, optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Steam the cauliflower, broccoli, and carrots until just tender, about 5 to 7 minutes.
- Melt the butter in a saucepan over medium heat.
- Stir in the flour and cook for 1 to 2 minutes until bubbly.
- Gradually whisk in the milk and cook until the sauce thickens.
- Remove the pan from heat and stir in the cheese and seasonings.
- Combine the steamed vegetables with the cheese sauce and mix well.
- Pour the mixture into a greased baking dish.
- If using, sprinkle breadcrumbs on top.
- Bake for 25 to 30 minutes, until bubbly and golden on top.
- Let it cool slightly before serving.
Notes
Keep the steamed veggies slightly firm so they hold up in the bake. Taste the sauce before mixing it with the vegetables to adjust seasoning.
