Ingredients

  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil (or butter)
  • Pinch of red pepper flakes
  • Fresh parsley or cilantro, chopped
  • Salt and black pepper, to taste

Instructions

  1. Heat a nonstick or cast-iron skillet over medium heat and add olive oil.
  2. Sprinkle crumbled feta into the hot pan to form a light layer and let it sizzle for 1–2 minutes until golden and crispy.
  3. Gently crack the eggs on top of the sizzling feta and cook for 3–4 minutes until the whites are set and the yolks are runny.
  4. For firmer yolks, cover the pan for the last minute of cooking.
  5. Sprinkle with red pepper flakes, chopped herbs, salt, and black pepper.
  6. Slide the crispy feta fried eggs onto a plate and serve immediately.
