Description

A hearty and warming stew made in the slow cooker, perfect for busy nights.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) green beans, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (3 oz) tomato paste
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef and chopped onion in a skillet over medium heat.
  2. Drain excess fat from the skillet.
  3. Transfer the beef and onion to the crock pot.
  4. Add the carrots, potatoes, corn, green beans, diced tomatoes, tomato paste, beef broth, Worcestershire sauce, garlic powder, salt, and pepper.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 360 to 480 minutes or on high for 240 minutes.
  7. Taste and adjust salt and pepper before serving.
  8. Serve warm and enjoy your hearty stew.

Notes

This stew can be made lighter with lean ground turkey and low sodium broth. Serve with crusty bread or steamed rice.
