Description

A warm, hearty lasagna-inspired soup made in a crockpot, perfect for busy evenings and chilly days.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil, for garnish

Instructions

  1. In a skillet, brown the ground beef with chopped onion and minced garlic. Drain excess fat.
  2. In a crockpot, combine the browned beef, crushed tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper.
  3. Cook on low for 360 minutes or high for 180 minutes.
  4. About 30 minutes before serving, stir in the broken lasagna noodles.
  5. In a bowl, mix ricotta cheese with some salt and pepper.
  6. Serve the soup hot, adding a dollop of ricotta cheese and a sprinkle of mozzarella cheese on top.
  7. Garnish with fresh basil if desired.

Notes

For a healthier twist, use lean ground beef or turkey, whole wheat lasagna noodles, and add fresh vegetables like spinach or zucchini.
