- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, room temperature
- 4 cups powdered sugar
- 1 cup dark chocolate, melted
- 2 tablespoons heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Mix flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add eggs, milk, oil, and vanilla to the dry mix and beat until smooth.
- Stir the boiling water into the batter very carefully; the batter will be thin.
- Pour the batter evenly into the two prepared pans.
- Bake for 30 to 35 minutes until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes.
- Turn the cakes out onto a wire rack and cool completely.
- Beat the butter until creamy for the buttercream.
- Add powdered sugar gradually and then mix in melted dark chocolate until smooth.
- If the frosting is too stiff, add heavy cream to reach the desired texture.
- Place one cake layer on a plate, frost the top, add the second layer, and frost the top and sides.
- Decorate as you like and serve.
Notes
For a lighter version, swap whole milk with lower fat or plant milk and reduce the sugar by up to 25%.
