Ingredients

- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 (15-ounce) can black beans, rinsed and drained
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 red onion, thinly sliced
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Instructions
- Add the rinsed chickpeas and black beans to a large bowl.
- Whisk olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
- Pour the dressing over the beans and toss to coat.
- Add the sliced red onion, feta, and parsley to the bowl.
- Gently toss everything until well mixed.
- Cover the bowl and chill for at least 30 minutes.
- For best flavor, chill a few hours or overnight.
- Serve cold or at room temperature.
Notes
Taste the salad before chilling and adjust salt or vinegar as needed. Store in an airtight container for up to 4 days.
