- 2 large Egg Yolks
- 1 tsp Peppermint Extract
- 1 tsp Vanilla Bean Paste/Extract
- 1 cup Peppermint Chips
- 1 cup Semi-Sweet Chocolate Chips
- 1/2 cup Crushed Candy Canes (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another bowl, cream together softened butter, brown sugar, and granulated sugar.
- Add egg yolks, peppermint extract, and vanilla. Mix until combined.
- Gradually incorporate the dry ingredients into the wet mixture until fully combined.
- Stir in peppermint chips, semi-sweet chocolate chips, and crushed candy canes if using.
- Scoop cookie dough onto baking sheets lined with parchment paper.
- Bake for 10-12 minutes or until cookies appear set.
- Let cool on baking sheet for 5 minutes before transferring to a cooling rack.
