A quick and easy casserole featuring chicken, tzatziki sauce, rice, and fresh vegetables, perfect for busy nights.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup tzatziki sauce
- 1 cup cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, tzatziki sauce, rice or quinoa, cherry tomatoes, cucumber, feta cheese, and dill.
- Season with salt and pepper.
- Transfer the mixture to a greased casserole dish, spreading it evenly.
- Drizzle a little olive oil on top.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until heated through and lightly golden.
- Let it cool for a few minutes before serving.
Notes
Can be made ahead and stored in the fridge for up to 24 hours before baking. Also freezer friendly for longer storage.
