Description

A quick and easy casserole featuring chicken, tzatziki sauce, rice, and fresh vegetables, perfect for busy nights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup tzatziki sauce
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, tzatziki sauce, rice or quinoa, cherry tomatoes, cucumber, feta cheese, and dill.
  3. Season with salt and pepper.
  4. Transfer the mixture to a greased casserole dish, spreading it evenly.
  5. Drizzle a little olive oil on top.
  6. Cover with aluminum foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until heated through and lightly golden.
  8. Let it cool for a few minutes before serving.

Notes

Can be made ahead and stored in the fridge for up to 24 hours before baking. Also freezer friendly for longer storage.
